Baked Zucchini Fries
3 medium size zucchini’s
3/4 cup Italian seasoned Panko breadcrumbs
1 tsp cayenne pepper
3/4 cup Parmesan cheese
1/2 cup olive oil
Preheat oven to 350 degrees.
Wash and dry zucchini. Cut off the ends of each zucchini then laying the zucchini down cut in half. Cut each half into quarters lengthwise.
In a shallow bowl combine breadcrumbs, cheese and cayenne pepper. In a separate small shallow bowl add only the 1/2 cup of olive oil. Coat zucchini in the olive oil letting excess olive run off, then dip in cheese mixture until well coated. Place on ungreased baking sheet.
Once you’ve breaded all the zucchini drizzle the excess olive oil over the zucchini sticks. Place in oven on 375 degrees for 10 minutes. Switch oven to broil and broil on hi for 5 minutes or until crispy golden brown. Be sure to check the zucchini periodically so as not to burn them.
Variation: In place of cayenne pepper add 2 tbsp balsamic vinegar to the olive oil and fresh cracked black pepper to taste
