Tomato, Prosciutto & Fresh Mozzarella Skewers
1 pint of cherry tomatoes
1/4 lb prosciutto (sliced as thin as possible without shaving)
Fresh mozzarella pearls (drained)
Fresh basil leaves
Salt & pepper
To prepare a tomato, fresh mozzarella, prosciutto skewer start by washing and drying the tomatoes and basil leaves. Slice each piece of prosciutto into strips, approximately 1/2″ in width. On each toothpick starting with the prosciutto alternate into a pattern of prosciutto, tomato, basil, prosciutto, then mozzarella, prosciutto, basil leaf and tomato. The thin strip of prosciutto will weave in between as shown in the picture above. Set each toothpick on a platter and stripe with balsamic glaze. Add salt & cracked black pepper to taste.
