Homemade Baked Potato Chips

Serves: 6-8


3 large baking potatoes or 6 medium Idaho potatoes

1/4 cup extra virgin olive oil

Fresh cracked black pepper to taste

Fresh ground Himalayan pink salt or any other course salt

 

Preparation


Preheat oven to 375 degrees.

Leaving skin on wash and thoroughly dry potatoes. Slice potatoes into thin round disks and place in large bowl. Add olive oil, salt, and pepper and toss until potatoes are well coated.

Spray two baking sheets with cooking spray. Evenly spread potatoes out on baking sheets and place in preheated oven. Bake approximately 10-12 minutes per side or until desired crispness.

Remove from oven and place on cookie racks, parchment or wax paper to cool.

Variations: (1) in place of salt and pepper add a packet of zesty dry Italian dressing mix; (2) add 2 tbsp of balsamic vinegar for a little extra kick; (3) add 2 tsp dry buffalo rub for a little extra heat; (4) add 2 tbsp barbecue sauce for barbecue chips.
