French Toast Sandwich

4 slices Texas toast                                             1 tsp vanilla

4 oz blueberry cream cheese, softened            1 tsp cinnamon

2 eggs, scrambled                                               1/2 tsp nutmeg

1 tsp white sugar                                                 2 tbsp vegetable oil

1/4 powdered sugar



In a small bowl cream together blueberry cream cheese and powdered sugar. Set aside.

In a medium shallow bowl combine eggs, sugar, vanilla, cinnamon and nutmeg. Using a whisk scramble the egg mixture.

Add the 2 tablespoons of vegetable oil to a large frying pan and warm over medium heat. While oil is heating dip each side of each piece of Texas toast into the egg mixture. Letting the excess egg drip off then add the toast to the pan once the oil is heated. Cook until golden brown on each side. Set toast onto paper towels to absorb excess oil.

Spread cream cheese mixture over each piece of toast and stack 2 (two) pieces together, cream cheese side to cream cheese.
