Cinnamon Banana Pancakes

2 cups flour                                      2 cups milk

3 tsp baking soda                             1 egg

1 tsp baking powder                         1/2 tsp vanilla

1/2 tsp nutmeg                                  2 ripe bananas, mashed

1 tsp cinnamon                                  3 tbsp vegetable oil

1 tbsp sugar                                    

1/2 tsp salt

 

Preparation


 In a medium bowl, using a whisk, combine flour, baking soda, baking powder, nutmeg, cinnamon, sugar and salt.

 In a separate bowl whisk together milk, egg, vanilla, and vegetable oil.

 Gradually whisk in dry mixture to milk mixture. Once well combined (batter will be lumpy) add in the mashed bananas and thoroughly combine with rubber spatula.

 Using a large frying pan or griddle melt 1 tablespoon of butter over medium heat, coating the bottom of the pan. Measure out 1/4 cup of batter and pour onto heated pan/griddle. Cook until golden brown on both sides.

Stack pancakes with a pad of butter in between each pancake and top with cut up banana pieces and maple syrup.
