Spring Mix &Prosciutto Salad with Balsamic Vinaigrette

1 – 10 oz bag of spring mix

1/2 cup shaved Parmesan

2 slices of very thinly sliced Prosciutto

Grape tomatoes

Dressing:

1/3 cup extra virgin olive oil

1/4 cup balsamic vinegar

1 tsp Dijon mustard

1/2 tsp sugar

1/2 tsp garlic salt

salt & pepper to taste

 

Preparation


Dressing: In a small bowl combine all dressing ingredients and whisk together.
Salad: Cut each piece of prosciutto in half and then into three equal strips. In a serving bowl combine salad ingredients and pour dressing over top and mix thoroughly.
