Simple Arugula Salad

1 – 5 ounce container Arugula

1 cup shaved Parmesan or Romano cheese

1 Lemon

2 tbsp olive oil

Fresh cracked black pepper to taste

Salt to taste

 This very simple but delicious Arugula salad is the perfect addition to almost any meal.

In a medium sized serving bowl or platter combine arugula and cheese. Cut lemon in half and squeeze lemon onto salad. Add olive oil, salt, and pepper. Toss until well coated. Taste! If you like it a little zestier add more lemon juice.

Variation: (1) add grilled chicken and you’ve turned a simple side salad into a meal; (2) add spaghetti style zucchini, squash and red beets (use a spiralizer or julienne peeler to make pasta like vegetables strips)
